Because regular ice has one huge advantage metal can't copy. When ice melts, it absorbs a massive amount of heat from the drink around it. That phase change from solid to liquid acts like a powerful cooling engine. Metal cubes can only absorb heat until they warm up, but since they never melt, they lose cooling power much faster than real ice. So, the thing that makes ice messy is also what makes it so effective.
