Jamaican jerk chicken is prepared by marinating chicken pieces in a mixture of green seasoning (scotch bonnet, thyme, ginger, garlic, shallot, white onion, green onion, and cilantro), soy sauce, seasoning salt, and allspice for approximately 3 days, then grilling on charcoal until the internal temperature reaches 74-75°C; the charcoal grilling method imparts a distinctive smoky flavor that cannot be replicated with propane grilling.
