This is my Jamaican jerk chicken platter. Let's hit some jerk chicken on the charcoal. So, we have five quarter chicken here. Nice lit wash in lemon, lime, uh, vinegar, and salt and water.
This is green seasoning from my oxtail video. So, just go back to my oxtail video. I said just put some on the side.
And this is the side here. So, it has scotch bronette, thyme, uh, what else?
ginger, garlic, shallot, white onion, green onion, cilantro, uh scotch bonnet, all the goodness. So to this green seasoning, four, five tbsp of soy sauce, 2 tbsp of seasoning up, 2 tbsp of allspice.
Nothing to it now. Work this in. Work it into the crevice as well. Here we go. I have this marinated for about 3 days now. Now we got it on some charcoal. All right. I know it's going to taste very delicious on some charcoal because last episode we did was it chicken? I forgot what we did on charcoal. But the flavor came out amazing.

Fry until it becomes nice and golden like this. Next up, Jamaican dumpling festival. So, 1 cup flour, 1/3 cup of cornmeal, 1/3 cup of sugar as well, teaspoon baking powder. Let's go.
Wet batter consists of 1 cup of milk, 3 tbsp of oil, one crack egg, no shell, please. Scoop them in. Fry until golden crispy.
