It's tied to blood pressure, heart disease, and kidney damage. and caregivers are often the ones cooking meals for the two most vulnerable people in the house all at once, an aging parent and younger children. It's the only way to let these deep dives keep finding you. Let's start with the most beautiful and most suspicious thing in your cabinet. Turmeric. that almost unreal glowing yellow orange spice.
Here's the open question. You know, I want you holding the whole time. What if the brightness itself is a warning sign?
To answer that, come with me to Bangladesh in the 1980s. It's monsoon season and a massive flood has hit the turmeric harvest. Turmeric in nature isn't found as a powder in the ground.
It's actually a knobby root, a risome that has to be boiled, dried in the sun, and polished. But the flood water won't let it dry. So instead of curing that into a prized bright yellow, the roots will turn dull and blackish. Farmers are staring at a ruined crop that they can't sell because buyers pay for color. So what do they do? They go looking for the cheapest way to make a dull root look vivid again. And what they find is a pigment, an industrial pigment that's used to color plastics, furniture, and the bright yellow paint on school buses or construction equipment. They start dusting it into the roots during polishing and it works. The turmeric looks gorgeous and it sells.
Unfortunately, there's just one problem with that pigment. It contains lead chromate. And here's the part that should make your stomach drop. The flood ended, but the practice didn't. It continued for four decades because the colored roots simply fetched a higher price. And most of the processors doing it had no idea it was toxic. I think they weren't villains, but they were just poor people trying to make a living copying what worked. So, keep keep in mind that sometimes the brightness is actually a danger. And the reason is a 40-year-old flood that taught a whole supply chain that a beautiful but a poisonous habit. Now, how do we even know all this? This is where the story turns into a detective novel, and it took two women to crack it. One was a public health detective in the New York City Health Department chasing children with mysteriously high lead levels in their blood. The other was a Stanford graduate student named Jenna Foresight who in 2014 started investigating why pregnant women in rural Bangladesh had so much lead in their bodies.
Together with a team of scientists, they did something really clever. Lead comes in slightly different flavors or isotopes depending on where it's from, almost like a chemical fingerprint.
They match the fingerprint of the lead in people's blood to the fingerprint of the lead in adulterated turmeric. And it was the first time anyone has directly linked the spice to the poisoning. Some samples carried lead at 500 times the legal limit. There is, by the way, no safe level of lead. None. Which is what makes for a little color such a dangerous phrase. And here's the mystery I want you to carry into the next section. The researchers lit initially couldn't find this adulterated turmeric outside of Bangladesh. Their theory was the exporters had cleaned up their act for countries with stricter testing.
So, that may be comforting to you, right? But hold that thought because it didn't turn out that way. Because in October 2023 in the United States at stores like Dollar Tree and Family Dollar, something went wrong with a children's snack. Little squeezable pouches of cinnamon applesauce, Wana Banana, and the store brands Shnooks and Weiss.
A sharp investigator at the North Carolina Health Department noticed a cluster of kids with elevated blood levels of lead and found one thing they all had in common, these pouches. And what followed became the largest spice driven poisoning event in modern American memory. More than 500 children across 44 states, nearly 3 million pouches recalled. One sample of the cinnamon tested over 5,000 parts per million of lead. That's roughly 2,000 times a proposed international safety limit for spices.
Then the lab did one more test and this is the whole the moment the whole video clicks together. They asked what form is this lead in? The answer came back lead chromate. The same industrial pigment from the Bangladesh turmeric story. This time it was found in cinnamon grown in Ecuador, from bark grown in Sri Lanka, sold in American dollar stores to toddlers. The FDA's leading explanation here is something with a bloodless name and an ugly meaning. Economically motivated adulteration, what I would call food fraud. Someone somewhere in that supply chain added a cheap toxic pigment to make the spice look richer and way more and just pocketed the difference. So that whole comforting theory from before that this toxic practice just stays overseas, I think that's closed and not in the way we wanted, the fraud is global and our import system catches only a small fraction of it. If that makes you want to inform your friends and family for their own safety, the most useful thing you can do is share this video with them. Awareness, I think, is genuinely what can save people's health. Now, I owe you that second poison I promised because lead chromate isn't just one toxic metal. It's two fused together in a single molecule.
There's the lead and then there's the chromium. And I'm not talking about the harmless kind that's in a multivitamin or a shiny car bumper. The chromium and lead chromate is actually hexavalent chromium CR6. If that rings a bell, it should. It's the contaminant in the Aaron Brochovich case, the one in the California groundwater that became a famous movie starring Julia Roberts.
Here's exactly, you know, where to draw the line. So listen closely. When hexavalent chromium is inhaled, whether it's by workers as dust or fumes, the science is settled. It causes cancer. I think that's not controversial at all.
But almost everything we know so far is about breathing it. What happens when you eat it a little bit at a time in contaminated food? There's a real gap in the science so far. In long-term studies, animals given hexavalent chromium in their water have developed tumors in the mouth and the incest. But I need to flag clearly that those are mouse and rat studies, not yet proof in humans. In people, studies near chromium polluted water hint at more stomach cancer, but that evidence is still kind of contested. So, here's the verdict so far. Ingesting hexavalent chromium from food is biologically alarming. It can damage DNA and inflame the gut lining, but the human risk from the amounts found in spices is genuinely underststudied and I think deserves more research. This uncertainty isn't reassuring, but it's a blind spot. So far, we've been focused on the lead, and that second poison riding along with it has barely been measured. So maybe the community should work on that research.
Now, let me give your brain a breath and a bit of history because this is older than you think. And weirdly, it's a hopeful detour. 200 years ago in 1820 a German chemist in London named Frederick AUM published a book with one of the greatest titles in science a treaties on adulterations of food and culinary poisons. Everyone knew it by its subtitle lifted from the book of kings.
There is death in the pot. Aim tested what Londoners were actually eating and was just absolutely horrified. Pepper that was blocked up with the sweepings off the factory floor. Cheese that was reened with lead. Pickles that were dyed attempting green with copper. Candy that was brightened with poison. Does this all sound familiar? It's the same scheme as our lead chromate. Companies would fake the color, fake the weight, and take the money. Aim did something brave and nearly unheard of. He printed the names of the companies doing it. His book totally flew off the shelves.
Unfortunately, it also made him powerful enemies who soon accused him of mutilating library books and he had to flee the country in disgrace. The fraud outlived the whistleblower. But the story didn't end in 1820. Fast forward to the early 1900s in America to a stubborn government chemist named Harvey Wy. To prove that the preservatives and dyes in American food were poisons, he recruited 12 young volunteers and fed them measured doses of borax, formaldahhide, and copper sulfate. The press named them the poison squad. They got sick on purpose for evidence.
That campaign, plus a million letters from outraged women, plus Upton Sinclair's book, The Jungle, all pushed Congress to pass the Pure Food and Drug Act of 1906, the law that gave birth to the FDA. So, why am I telling you all this? Because I think the lesson of two centuries is the encouraging part. Color and weight fraud is ancient, and ordinary people who refuse to look away have beaten it back before, which means that we can do that again. If history made the science stick, that's the point. Share this with someone who loves a good story. Okay, so now you've been patient and here's the part you can act on tonight. The single best move for any individual in this situation is this.
Buy whole spices and grind them yourself. Whole cinnamon sticks instead of powder. Whole dried turmeric, whole nutmeg, peppercorns, anything else like cumin, coriander seeds, dried chilies.
Here's why it works. And it's beautifully simple. You cannot invisibly dust a pigment onto an intact root or a stick and have it disappear the way it vanishes into a uniform powder. You can see a whole spice with your eyes. You control the grinding. Things like adulteration and cheap fillers thrive in powders because precisely the powder hides everything. But a $5 coffee grinder you keep just for spices removes most of that hiding place. I think buying whole spices helps defeat fraud.
The pigment, the fillers, the weight padding. A whole spice from a source that tests its product beats a powder every single time. Which brings the second rule. Buy from brands that test for heavy metals and say reputable companies publish this. Look on their website under quality or standards and look for certifications like USDA organic or the global food safety initiative. And here's a reassuring truth. Mainstream major brand spices from established American retailers generally test low. The dangers concentrate in two places. The most vividly colored powders where fraud pays the best like turmeric, paprika, chili powder, and spices bought informally abroad or in unlabeled bags, including ones carried home in suitcase from a foreign trip. New York City's own investigators found exactly that. The worst lead came from spices purchased overseas, often in unmarked containers.
Three quick guard rails before we land.
First, heat does not remove lead.
Cooking it longer does nothing for protection. Second, please don't panic and throw out the turmeric that's already in your spice cabinet. Turmeric has real value, and the answer is better sourcing, not fear. Third, if you're worried about a young child in your care that may have been exposed, especially under six, don't guess. Ask a pediatrician about a simple blood test for lead. So, let me leave you with where I find hope here. Remember Bangladesh where this whole story started? After the scientists exposed it and after the public campaigns, the fines, the inspectors armed with handheld scanners that read a spices metal content in seconds, adulteration in the markets there they tracked fell from 47% to nearly zero. and the blood lead levels of the people and the children there dropped right along with it. So 200 years after aim warned of death in the pot, we finally have ways to catch the lie before it reaches the child. The fraud here is old, but so is the fight against it.
