MELT IN YOUR MOUTH Chocolate Dipped Lemon Filled Cookies!!Added:
Hello everybody. Welcome back to BBO's Kitchen and welcome to those of you who are new to my channel. Today I am going to be making some lemon filled sandwich cookies that are dipped in chocolate and nuts. And uh this recipe is also in this cookbook that I bought on my trip to the mountains, Taste of Home. They look and sound really good and I have all the ingredients to make it. So I'm going to give these cookies a try and I want to share this recipe with you and I'm going to start by showing you the list of ingredients that it takes to make these cookies. So here is your list. You will need allpurpose flour, granulated sugar, butter, vanilla extract, egg, confectioner sugar, lemon juice, finely chopped nuts, semieet chocolate squares.
Okay, I have let my butter sit out at room temperature until it has softened.
And so the first thing that I'm going to do is to cream my butter and my sugar, my granulated sugar together.
And so we want to get this going.
I will first blend up my butter.
Okay. And I'm going to add my sugar to this.
And now I'm going to cream the sugar and butter together.
I'm going to scrape down the sides of the bowl. The recipe just said to cream your butter and sugar, but I like to beat it until it's really nice and fluffy. I don't know if it'll make a difference in this recipe, but that's the way I'm doing it. Okay. And I'm going to combine that again. Now, I'm going to add my egg yolk and my vanilla.
I want to mix that until it's blended really well.
Okay. And now I'm going to start gradually adding my flour.
Heat.
Heat.
Okay, I'm going to scrape down the sides of the bowl once more and I'm going to blend that one more time just to make sure all of that is blended together.
Okay. Okay. Now I have to roll these into 1 in balls and place them about 2 in apart on my pan. And I'm using parchment paper. It doesn't say whether or not to do that, but I am doing that.
Um, place them 2 in apart.
And then you will come back and you will flatten them with a glass bottom of a glass dipped in sugar.
Basically, this is I think kind of like a uh it would probably be more like a shortbread cookie than a sugar cookie cuz it doesn't have a whole lot of sugar in it.
But I don't know. Uh the filling will make it sweeter and I think they will be really really good.
I hope so. Anyway, we'll see.
It's not bad. I thought it might really stick to the palms of my hand, but it's not. It's It's got so much butter in it, I guess, keeps it from sticking too much.
I will continue rolling these out and when I get them all rolled, I will come back and we will press them down and get them in the oven. So, I'll be back in a little bit. Okay, all the cookies are rolled out and so now I'm going to use this glass to mash my cookies into a 2-in circle. And it tells me to dip my glass in sugar, but it's not going to stick on its own. So, I am going to lightly mist it with a little bit of Pam just to help the sugar to stick.
And so, I'm going to just press it down into a 2-in circle.
You probably need to just kind of tap it to begin with and then come back and press it after you moisten your glass again or dip it in sugar to keep the dough from sticking to your glass.
You do want to keep your circles as uniform as you can.
because you're going to make a sandwich cookie out of these.
I'm going to lightly press each one and do this like an assembly line and I think this will go quicker.
Okay. And now I'm going to go back over these again.
That one is really wanting to stick for some reason.
I have the oven preheated to 350° and these will bake 10 to 12 minutes.
Okay, you see how that's done? So, I'm going to move to the rest of my cookie dough and get them pressed out and then I'll be back after I put them in the oven. Okay, my cookies have browned and so I'm going to bring them out and I will transfer them to this wire rack and let them completely cool.
While my other pan finishes baking, I'm going to go ahead and transfer these to this wire rack so they can cool.
These baked for 10 minutes and the others that I have in the oven I had on a bottom rack so it's taking a little bit longer for them to brown.
I almost got these too brown, but they're they're okay.
Okay. And these are also finished baking. So, I'll go ahead and get all of these off of the pan and onto the wire rack to cool.
And I will make my filling to go in the middle of these cookies.
And after they've cooled, I will fill them. So, I'll be back in just a few minutes. Okay. Okay, my cookies have cooled and so I'm going to make the filling for them. And so I'm going to blend my another stick of butter that is softened and my confectioner sugar and lemon juice. And then I will fill these cookies. I'll make sandwich cookies out of them. And then I'll dip them in chocolate and nuts.
I want to just cream my butter.
And now I will add my confectioner's sugar to this.
And I'm going to blend that.
And I'm going to drizzle my lemon juice in.
I want that to be nice and smooth. So, I'm going to let this beat for a little bit. I did not sift my confection or sugar. If you sift it, then you don't have this problem.
Okay, I'm going to scrape down my bowl.
That looks nice and fluffy.
And by beating it on high, I've gotten all of the lumps out of my sugar, I think. But I'm going to beat it just a little bit more to make absolute sure.
Okay, I've got my filling made. And so now I'm going to uh apply it to the cookies.
I'm just going to spread it.
I don't really know. It doesn't say how how much, but you're to spread it on the cookie and then top it with another cookie.
So, I will get this done and then we'll go to the next step, which will be melting the chocolate and we'll dip these in the chocolate and then in the chopped nuts. I'm doing mine like that. I don't know how much you're supposed to apply, but I'm just doing a dollop in each cookie.
Okay, I'm going to move forward with this and get all of these filled and then we will go to the next step. Okay, all the cookies are filled and so now I've got to melt my chocolate and my butter and then I'll dip these in and then dip it into nuts. So, let me melt this. Okay, I have heated this in the microwave for 45 seconds and it is melted. There's just a little tiny piece, but it's dissolving.
So, I have my chocolate melted and now I will dip my cookies and we'll get through with this.
Okay, I'm actually going to wipe my spoon off on this cookie and I'm going to dip my cookie and then dip it in the nuts. Now, I'm using pecans. You can use whatever kind of nut that you choose, but I I decided to go with pecans. I almost did almonds, but then I chose differently. So, this is how it looks. Now, I'll place it on the wax paper and let that harden.
And so, I will go to the next cookie.
Dip it and dip it in the nuts.
Those are really pretty. My chocolate seems to be coming off in my nuts.
So, I am going to sprinkle them onto my chocolate. I think that will be the better way to do that.
You do want to have your nuts chopped pretty fine.
Okay, I'm going to continue with this process and when I get finished with these cookies, I will be back. Okay, I am finished with the cookies and I think they have they're not totally hardened up. So, I'm just going to let these sit. They've turned out really pretty. Uh I think they're going to be really really good.
But I'm going to let the chocolate set and I am getting ready to do another video. It will be our supper for tonight. And so I'm going to work on that and leave these and when Clayton gets home, I'll let him do a taste test for you because hopefully the chocolate will be set by then. But anyway, I'll do a taste test a little bit later. I'm going to get started on another video.
Be sure to tune in to that one. It is pork tenderloin medallions that I'm cooking. Uh a cream sauce and some stir fried well not really stir-fried but sauteed vegetables. It looked really, really good. So, that's what we're going to have for supper tonight. So, let me get busy with that. I'll see you soon when we do a taste test on the cookies.
