[00:00:00]Hey y'all, it's the Farming PhD, and today I want to share a fun fact about chicken eggs.

[00:00:05]>> [music] >> So, today we're at Watson Family Farm, and these are some freshly laid eggs from the ladies here. And since they're freshly laid, they're safe to [music] be able to be stored outside of the refrigerator. And this is because these eggs have a protective layer over them called the bloom.

[00:00:20]>> [music] >> And typically in industry, these layers are washed off, [music] and that is why we see our eggs in the refrigerator compared to like countries like in Europe [music] that keep their eggs on the shelf because they don't go through that process before putting the eggs out.

[00:00:35]So, these eggs are perfect to be stored on the countertop for 3 [music] weeks.

[00:00:40]You can also put them in the fridge unwashed, and they can stay fresh up to like 3 months. Or >> [music] >> you can wash them and put them in the fridge and just follow like the guidelines for typical eggs that are refrigerated.

[00:00:53]>> [music] >> And if you ever feel concerned about your eggs not being fresh, you can always do a float test with them. So, you can put them [music] in a cup of water, and if they float up, that means there's a possible air bubble in the eggs making [music] maybe making them unsafe to eat.
