[00:00:23]Um plus bananas are cheap. 23 cents? I mean, come on. Versus a $3, $2 energy drink?

[00:00:45]Let's extract um Uh I think I'm going to GC first. Let's go. We're going to extract with water.

[00:01:18]All right, I've been I've been shaking these up for a hot minute here and it's uh I mean, they're looking pretty pretty frothy. All right, regular versus organic.

[00:01:34]Looking pretty good. Let's spin these out.

[00:01:40]Off the fuse. All right, regular banana split nice.

[00:01:45]Let's see organic banana.

[00:01:48]Exactly the same. Split the same. All right, so we're going to pull the bottom layer.

[00:01:56]Wash the tip in DCM and then you see there's like a material essentially in the middle.

[00:02:07]All right, there we go. I mean those are pretty good looking samples for banana extractions. All right, so the difference between organic and non-organic bananas is gamma radiation.

[00:02:16]I think this is what they're using, blasting it with gamma radiation from a gamma source.

[00:02:23]And it the gamma ray slows the breakdown of starches so that the ripening process doesn't happen as quickly. So they hit the green bananas with some gamma rays.

[00:02:34]It's like a Spider-Man situation going on. And you can't do this.

[00:02:40]So organic bananas strictly prohibited from being treated with ionizing radiation. So I don't think we're going to see any molecules related to this, but what is the difference in flavor?

[00:02:52]There's not supposed to be any difference in flavor, but GC Dave the liquid injection re-extracted the bananas directly. Let's see what we got here.

[00:03:01]And we're seeing more early volatiles in the organic banana, organic banana, versus the regular banana.

[00:03:10]Which I think is really cool cuz I tasted this with organic banana and it tasted better. So this first cluster right here, the major flavor of banana is this butyl 3-methyl acetate, better known as isoamyl acetate or banana oil. That is your banana flavor.

[00:03:34]I mean you can make this stuff synthetically. This is clearly natural banana isoamyl acetate. I think it also attracts bees, so um anyways, we got banana oil in the bananas. Can't beat that, guys. All right, and then the last of the other peak We got a couple other little minor flavors here, but this other peak is both but much higher in the organic banana.

[00:03:57]This is another ester. So, this is butanol 3-methylbutyl ester. And this is isoamyl butyrate. So, instead of the acetate, we got the butyrate. What does the butyrate taste like?

[00:04:13]And let's see, that is an odor or aroma reminiscent of bananas, apricots, powerful and fruity. So, that is your two we have isoamyl butyrate and isoamyl acetate are your distinct banana flavors.
