[00:00:04]>> Don't worry. It's not what it looks like. That brown water is brine, salt dissolved in water, so concentrated it stays liquid at 5° Fahrenheit. It looks that color from years of rust build-up off the metal molds. What gets frozen inside should be filtered drinking water. While it freezes, the ice never touches the brine. It forms sealed inside steel molds. To release it, they pour water over the molds or briefly dip them. Just enough for the block to slide off the metal. The inside, the part that reaches your fish or food, never touched anything dirty. A 300-lb block takes a day and a half to freeze. And 500 million people in tropical fisheries depend on this for their fish to reach the market [music] fresh. But here's the part nobody tells you. In Vietnam, a study tested 45 ice factories. 49% came back positive for E. coli.
