Early ripening chay fruit varieties, such as Hwang Kum 2 and Chul Ri, can be identified by their white latex exudation when picked unripe, which indicates they are not ready for harvest and will have an unpleasant latex-like taste; these varieties typically ripen about two weeks earlier than standard varieties.

The mystery Che came from England's Orchard. They believe it is either Hwang Kum 2 or Chul Ri.Added:
All right, I'm doing a little update on my chay fruit. We did some investigating and we believe the scions came out of England's Orchard and that these early varieties are probably Hwang Kum 2 or Chul Ri.
I think they're Korean varieties. This one looks like it's maybe, you know, another week and a half before it's ready. There's some that are not quite there yet.
These ones are further off.
You can see some of these as well. Now, if you start to pick these early, you'll see a white latex come out of them and that's very similar to figs and mulberries.
And so you know that they're not ripe and they will have kind of a nasty latex-y taste to it. Now, if we go over here to a variety that is completely different.
See, that is what you would expect this time of the year. So, super excited about these early varieties of chay fruit.
