This is the ancient culinary art of five colored glutenous rice, a traditional masterpiece crafted by the Zwang people of China to celebrate San Yuan, an annual spring festival. It begins with foraging. To get these vibrant colors without synthetic food dyes, the artisan relies on botanical chemistry. She gathers maple leaves for black, wild turmeric for yellow, and native magenta plants for the reds and purples.
By crushing and boiling these botanicals, she breaks down their tough plant cell walls, extracting natural pigments like anthocyanins and curcumin directly into the water. Next, raw sticky rice is soaked in these vibrant baths overnight. The porous rice grains act like microscopic sponges, absorbing the pigmented water deep into their core. This ensures the color is locked in and won't wash away or bleed into the other colors later.
Then comes the canvas, a breathable woven bamboo steamer. To map out her design, she doesn't use toxic ink or markers. Instead, she uses a charred twig straight from the fire. A brilliant, completely foods safe way to sketch the guidelines. Grain by grain, using chopsticks and a spoon, she meticulously fills in the sketch. It is essentially ancient edible pixel art.
Finally, the entire piece is steamed over a wood fire. The steam cooks the rice, activating its natural starches to bind the picture together. As the grains cook, they become slightly translucent and glossy, which actually makes the natural botanical dyes look even more vibrant.
