The first way is to replace acceleration with rotation. If you've ever been on a carnival ride that spins really fast, you know how powerful the centrifugal force can be. So, if future humans establish a rotating space habitat and position everything in such a way that the outermost edge is down, then people will feel absolutely fine. Well, almost.
Because they'd have to deal with the dizziness from the rotation.
The other way to simulate gravity is to just keep moving. Einstein discovered that acceleration works in the same way, whether it comes from a massive gravitational object or the push of a rocket. And you can use that to your advantage. If you fire your rocket engines and maintain a constant acceleration of 9.8 m/s squared, you'll have no idea you're in a spaceship, unless you look out of the window, of course.
It will take a hell of a lot of fuel to maintain that kind of acceleration, but that's a different problem altogether.
