iPhone messages turn green when they are sent as SMS text messages through your cellular carrier instead of as iMessages through the internet via your Apple ID. To switch back to blue iMessage bubbles, you can toggle iMessage off and on in Settings > Messages, ensure you're connected to Wi-Fi or cellular data, reset network settings in Settings > General > Transfer or Reset iPhone > Reset Network Settings, or perform a hard restart by pressing volume up, volume down, and holding the side button until the Apple logo appears.
