- Hey everybody, I'm Bobby Deen and I've got a really great recipe that I'm excited about today.
It's a beautiful, fresh salad.
This is one of my mom's recipes from her magazine, and I'm real proud of her for it 'cause the ingredients are just off the chain great.
These are all things that I love, and I think you're gonna really like it too.
So we'll start by taking our spring mix here and put it in a big enough vessel to be able to, we need a big bowl.
And here we have exactly what the doctor ordered.
To this, we're gonna add some red onion.
Now, if you'd rather, you know, to personalize this for yourself.
If you don't like red onion, some people don't.
Some people like more, some people like less.
You could use Vidalia, whatever's fresh.
Yellow onion, whatever you want.
I'm not gonna overdo it with the onion.
Just my personal taste.
Now, the blueberries, I'm gonna use 'em all.
I love fresh fruits on a salad.
It's such a nice, whenever I go to a restaurant and I get a salad that's got strawberries on it or blueberries, it's just a really, really good, I don't know, it's just kind of surprising 'cause you don't see it everywhere, and they're such great flavors together.
The strawberries and the onion, the blueberries and the onion mixing together, really, really nice.
So that's it.
There's really not much more to it than that.
I'm just gonna toss my ingredients together.
Now here's the surprise, right?
This is a collaboration recipe.
My mom yesterday made in advance a blueberry barbecue sauce, and if that sounds great to you, you're right, 'cause I've already tasted it and it is scrumptious.
The flavors are wonderful.
It looks. - [Paula] It grows on you, don't it? - Oh, hey look who's here.
It grew on me immediately, right when I tasted it.
I was expecting, if you look at it, it looks like a cranberry sauce.
It's warm.
You serve this immediately right after you make it.
It looks like it would be sweet.
That's what you expect.
But when you taste it, it's really savory and just wonderful.
The blueberries are there, but the savory is full.
- You know. - And the garlic, I taste in it right away.
I mean it's just like really great.
- Yeah.
Well I was making it for you and I asked Theresa, I said, "I have no idea what he's gonna use this on."
I would put that on a pork tenderloin when it came out of the oven.
- [Bobby] And you would be right to do that.
Yeah, that would be great.
- So you know, there's a lot of different ways you can use it.
- Well, I'm putting it on chicken so.
I do already.
So I've got my ingredients tossed together and I'm gonna make sure I got some blueberry, some strawberries, little onion in my spring mix here, all on my plate.
And I'm gonna top it with a bit of toasted pecans, pecans, however you say that, you say it.
So toasted pecans.
Feta cheese.
I forgot to do this when I was mixing the lettuces, but a little salt, little pepper.
Toss it in with the lettuce and the fresh fruits.
And also, I'm just gonna put a little bit of fresh pepper and fresh salt right on top of mine.
Some shredded chicken.
Mmm, man, this looks nice.
Little hard boiled egg on the side would be good with this.
You know, salads are, however you want to do it is how you should do it.
We've got fresh white meat chicken here.
And right on the top, our blueberry barbecue sauce.
I don't wanna overdo it.
That looks just right.
And that is a beautiful barbecue blueberry salad.
Unexpected but wonderful.
And I'm telling you that barbecue sauce is oh so good.
Mmm.
Mmm, mmm, mmm.
It's great on this salad, like mom said, it would be great on a pork tenderloin, maybe even a pork chop.
Put that wherever you like.
Beautiful salad, I think you're really gonna like it.
