Successful gardening requires balancing garden size with maintenance capacity, using strategic planting techniques like seed tape for weed suppression, and focusing on crops that will actually be consumed rather than overplanting for preservation.

Cut it in half, it makes more.
>> Huh?
>> Cut it in half, it makes more.
>> Cut it in half, it makes more. Hey y'all, welcome to St Homestead. I'm Zach.
>> I'm Jim.
>> And we are doing a little late breakfast. We'll get into like kind of why here in just a second. But then we're going to be planting some garden.
So that's going to be really exciting to do. Ooh. Do you think that was yours?
>> It's not. I just got it out of there.
>> It's a hair.
>> It's fine.
>> It's fine. It's fine.
can't be wasting that protein.
>> So, we have a very busy week this week.
Um, and then also trying to stay healthy and also trying to, you know, it's a homestead and we are now past our last frost date and trying to not fall behind schedule. It can be a lot. It can be sometimes stressful, but thankfully we have I have a good partner and I hope she thinks the same that we're able to get through this stuff pretty well together. Um, so our kids, they do acting school and this is play week. So we have a >> showtime.
>> Showtime. We have practice every single day. It's a it's a distance from our house. So it takes >> Of course it can't be right here in town.
>> Yeah, >> that would be crazy.
>> Yeah, but is what it is. It's what you do for kids, right? You seem to be be a driver. Um, so we just got done doing a bunch of orders. A lot of you all that have been getting the U weight loss bundle. Thank you all. But you y'all are blowing our minds, keeping us busy. So, we just got that done. It's like lunch, so we are doing a late protein packed breakfast. Then, we're going to go drop the orders off, plant the garden, and then we got to get out of here at like 4:00. Um, but what we're doing is like a a really early dinner. We're doing a late breakfast, early dinner. That way, we don't eat out.
>> Yes. Um, and thankfully there is a gym close to where they do that, their acting school. So when we dropped them off to act school, we hit the gym up getting our gym time in.
[laughter] >> Yours is off.
>> Yours is salad. [laughter] Felt exhausted just explaining that to y'all.
>> Yeah.
>> Um, so what we're having for breakfast today is uh four eggs plus egg whites.
We'll split it in half. Turkey bacon and show them the kale.
>> Kale. We're going to do kale and eggs.
We grew that.
>> Yep. We grew that.
>> Yeah. Is >> that pretty? It's >> very pretty. You all will get to see all that in the raised beds here in just a little bit. But wanted to go and show you that. Having some blackberries, too.
This fruit.
>> Mhm.
>> Nice. Anybody catch the derby? Was this close? She came second with Renegade.
>> Win.
>> I took the risk and went big time on that 77 to1. Number 22. Oelli came third. I thought he was going to pull it out. Thought he was going to pull it out. That would have been a nice payday.
Are you on? You going to work?
>> It takes a second. You know that it takes a second till it doesn't take a second.
>> Yeah.
Three tablespoons of egg whites.
And I chop up this kale.
Last year I was making so many kale salads. Like just different variations of kale salads. like with apples and lemon juice. Even I made asparagus one time with kale. Lemon juice, olive oil, um salt. Can't remember what else I did, but it wasn't very many ingredients, but that was absolutely delicious.
>> Maybe a little parmesan.
>> There. There might have been some parmesan. We're definitely going to be doing that again this year cuz we have a lot of kale.
>> A lot of kale.
>> Crispy, crunchy kale.
>> Yep. Kale. Hell yeah.
>> Hell yeah.
>> You want to chop this cuz you're probably better at that.
>> Okay. Do you want it fine or?
>> Yes. Very, very fine.
>> Very, very fine.
>> Very, very fine.
>> A fork is the only utensil you can use to flip bacon.
>> Tongs. Chongs.
>> Tongs is what I use.
>> Fork is the best.
>> You say so.
>> I tried them all.
>> Caught them on.
>> Caught them off.
I think so pretty.
>> And if you've never had kale and eggs, you just want to cook your kale down a little bit cuz it's it'll cook a little bit longer than the eggs. So you just put it in there and cover it up. Let it sweat and that gets it down. Like you can see how much we had a huge pile. It goes down to nothing. So you think we're about ready for the eggs.
And you just pour the eggs right on in there with them.
Hey, that wasn't cool.
>> As my wife would say, if you can't see it, it ain't seasoned enough.
>> Mhm. Just enough.
>> Just enough. All right. Then we grated a little Parmesan on there. And there's your killing eggs.
>> Fire eggs.
There we go. Killing eggs, little sourdough toast, some blackberry and turkey bacon. And we are all having the same thing.
All right. Our breakfast lunch was absolutely delicious. And what are you working on?
>> I am making some more magnesium oil cuz we are sold out. If you haven't tried it yet, get it cuz it's amazing stuff. We use it every day and it it works wonders.
>> It's great for anything sore. So like if you have achy knees, stuff like that, you spray it on and just basically let it air dry onto your skin. That's real great. We have unscented and then we have a peppermint and eucalyptus scented. It kind of gives you the icy hot vibe with that. So, she's going to be working on that and I am going to take you all to the garden to show you what her and I did yesterday. We did a lot of stuff out there. Um, and it's time to take you for a little garden tour.
>> Yep.
Okay, so first off, we're talking about our front porch. So, we added the two hanging baskets and then these ginormous ferns that were finally able to come out. Aren't they just gorgeous? I love them.
And then in the green stock, this is our mint that's coming back from last year, but we have some uh lavender up here, some basil, and then over here, this was last year's rosemary, and we're not sure if it's going to come back. It's looking pretty dead and I'm not really seeing any new growth. Um, so we started another one and got another one out here. But the rest of the green stock is still very empty and needs to be filled in. And we don't have anything in this one either besides a few weeds on top that I need to get out. And we just love the vibe of the front porch with the hanging baskets, the ferns, and then the green stocks right here. We're probably going to fill them up with a lot of flowers.
We like doing that. Just making it really eye appealing. Um, but this one will be a lot of herbs over in this green stock. that seems to grow green stocks. These vertical planters, they really seem to grow really well with some herbs in them. All right, now let's flip over here to the garden. So, we've got this bed, that one, that one, that one, that one, and that one, that one planted, including the comfry in the middle. So, we still have one, two, three that we have to plant. And those will be a mix of cucumbers, green beans, and then also some flowers. Y'all know I love growing some flowers in the garden.
Um, so we'll have them going here soon.
But yesterday, we got the other ones planted. and I want to show youall what's in there.
>> So, first off, y'all saw if y'all caught the video a while back ago. Um, this is actually the hos seed tape that we planted. This was my salad bow mix and then obviously kale. But y'all, this is my favorite bed. It looks absolutely gorgeous. And that that uh seed tape spacing made it perfect to where it's just completely full of all edible greens. So, you can just go through and clip clip clip eat or grab it, cut it, eat it, and it goes right back. And you don't have to worry about so much weeds because the spacing being so tight has really choked out all weeds that are in there. So everything that's tall and is is edible and is for a salo. So that's awesome. Love that seed tape. Love how this is looking. It is definitely probably the star of the show right now.
And this is one of our comfry beds. And you can tell I just completely cut it. A lot of people ask how to take care of comfry. You can cut it down to its bare stems and I promise you it will grow back very quickly. This is a volunteer lemon bomb. Look, volunteer lemon bomb we have here. And then over here in this large bed, we have cauliflower, broccoli, kale, and then romaine lettuce, which is actually one of our favorites. And putting it over here in this corner bed is actually strategic because we have this tree here. And in Kentucky, it can get h hot real fast and make things bolt. So, giving my cauliflower, my broccoli some really good shade. Yes, that'll make it grow a little bit slower, but for Kentucky and especially in our little area, um that really helps out to allow it not to bolt um and actually get our head. So, make sure you're giving your coal crops some good shade as that summer starts approaching. All right. Now, for the three beds that we planted yesterday, I actually got to get this one netted. I'm going to take the nets off and show you all. But before I do that, the reason we put those on there is really for one reason, and that's cats and chickens. So when things are baby plants, you know, you're still getting cats that are trying to jump in your bed. You still got chickens that are going around because we have free range basically everything. It seems like they love to get in garden beds and dogs too. They like to get in there and lay on them. So when our plants are very small and they're still kind of seedlings, that's when we have to really worry about them and worry about the animals messing them up. So we just put some frost cover netting on them and that usually helps prevent everything out. Now, once they get nice and established, like my salibbo bed and the kale beds, um they seem to leave them alone once they get pretty or a lot larger. Um so, that's just our little tidbit that we do to really make sure that our plants have a chance to grow. Okay, so in this bed we have jalapenos and bell peppers and that are the only peppers that we're growing this year. You can see them in there and it's kind of hard to see them cuz they're still small. Um and you got comfrey leaves all the way lay in there.
So, why in the world do I have comry leaves in my bed? Because comfrey is a fantastic fertilizer. And yes, you can make comfry tea if you want to. In our opinion, first off, it stinks really bad. It smells god awful, but it also attracts animals. So, because it smells awful, you know, dogs like it, cats like it, everything wants to get in there and get that comfry tea. So, we don't do it that route. That is a quicker route. I will say that. But, you can just cut and drop comfrey for fertilizer and just let it go into the soil, which is what we're doing here. And it's also kind of helps as like a mulch, too. That way any splashback from the the rain or watering happens. It helps kind of prevent some of that flash splashback onto the plants and giving them a disease. So that's why we put the comfry in there and that's why it looks crazy, but it's for a really good purpose to fertilize your soil. But we love peppers. We just don't love a lot of peppers. So we usually sometimes grow banana peppers and all that different stuff. Um but this time our primary things that we eat and what we buy at the grocery store, which is one of the whole purpose here is to cut down on the stuff that we're buying at grocery stores are jalapenos and bell peppers. And because we're doing this a little bit smaller, we are only growing what we will always eat. And those two peppers are the ones that we'll always eat. So we're not wasting time on spicier ones that are just fun to grow that we don't want to eat or we might not eat very often cuz we don't like that much heat. Um so that's why it's just going to be those. Also, last year we had we grew massive gardens. Massive gardens were grown. We put back so much food. This year is going to be more about fresh eating um and not so much putting back. So that's why we're doing it a little bit more condensed version and not the really large one. Also, our kids are very active and doing a lot of things. So, we're making sure that we're do growing what we can maintain and not growing too much that's going to be overwhelming and not allow us to enjoy the summer, especially with our young growing kids. Now, in this bed, again, comfrey everywhere, but this is our squash and zucchini bed. So, it's quite a few of them, but we do like squash and zucchini, and I am in love with Jen zucchini bread. I know a lot of y'all have made it throughout the years. It's still one of our more most popular videos on YouTube and that's Jim zucchini bread. It literally is the best recipe that you'll ever have and it is the most fantastic bread that you will ever taste. So, always make sure that we have plenty of zucchini in the garden so I can get my zucchini bread later in the year. All right. And in the next bed are tomatoes. So, see our little tomatoes in there, little guys.
There is I think 12 12 to 14 tomatoes in here. And again, same kind of method here, keeping it simple. There's two different varieties, Better Boys and Celebrities. We love those two. They're great for slicers, and that's all we need. We're also being very health conscious when we're doing our garden.
Tomatoes aren't the greatest thing because of their acidity, and it's just you're usually using tomatoes to make sauce, which are usually something that we're not eating as much nowadays. So, we're really just going to eat them with fresh slicers. That's about the main way that we'll eat tomatoes this year. And so that'll be plenty and enough probably for us to share with our neighbors in France. We went ahead and planted a little bit before Mother's Day, which the general rule of thumb down here in our little mountain area is you don't plant till after Mother's Day, which is coming Sunday. But I checked our next 10day and it looks like we're in the clear. Um we do have one that's hitting 39. It I when I checked it was like 44 and it's going down and down. So let's hope it doesn't keep going down.
However, I do have frost covers that are over them just in case something like that was to happen. Um, so I think we're okay to take the risk if you're in the 6B area or 7A, whatever we are now, I don't even know. Whether you're a beginner gardener, a longtime gardener, or somewhere in the middle, um, the biggest thing to always remind yourself every gardening season is don't overdo it. If you overdo it, then you're going to lose the momentum as you're getting into the heart of the gardening season cuz the weeds are going to start taking over or you're going to have too much to handle or you're going to have too much uh, bounty to be able to do with. And so that's when it comes to gardening that we really need to pay attention to what we're doing and understand through past years what we didn't like and what we did like. And as exciting as it can be at the beginning to plant all the seeds and have all the starts and then feel obligated to get all of those beautiful seedlings into the ground because you planted way too many, understand that it's okay to give some of those away, not start so much and have smaller gardens if that's what you can handle.
Because I promise you, a garden this size, which we're still going to do pumpkins over there, probably. Um, a garden this size will produce way more food than a large garden that's not tended to. So, Jen and I are calling this gardening season, the theme of it, classy. We're keeping it classy, keeping it simple. So, what's the theme of your garden this year? What are you going to grow? How big? How small? Is this going to be a big canning year for you all?
Are you gonna be eating more fresh and just straight out of the garden and not so worried about putting stuff back kind of season? What are you doing? What's your plan? See, as soon as the netting's off, here comes the cats. So, I hope you enjoyed our little mini garden adventure and seeing what's out there. We do have all kinds of garden plans that are still into play, but it was just so exciting to actually get some stuff in the ground, and I wanted to show you all.
There will be much more that's going.
We've got some uh cattle panel trelluses ideas that I'm going to do to try to maximize growth in these small little beds. So stay tuned for that. That'll be a lot of fun. But other than that, y'all, we hope you all have an absolutely great day. Go get your hands dirty and let's all cross our fingers for a little bit of rain. I think we're all in a drought, aren't
