[00:04:56]A busy McDonald's might serve around 1,000 customers in a day.

[00:05:01]A carrier's mess deck can push well over 15 times that volume while floating in the middle of the ocean.

[00:05:10]No emergency food delivery app when supplies run low.

[00:05:15]And no easy backup plan when half the kitchen crew catches whatever virus is currently making its way through the ship.

[00:08:55]All right, here's the part [music] nobody puts in the recruitment brochure.

[00:09:01]You've just reported aboard your first [music] ship. You've completed your training.

[00:09:06]You have a rate, a job that you spent months learning.

[00:09:11]Maybe you're an aviation mechanic. Maybe you're in electronics.

[00:09:16]Maybe you're in operations.

[00:09:18]You're ready to go do that job, contribute to the mission, start [music] building your career.

[00:09:25]Except, you're not.

[00:09:28]Not yet.

[00:09:29]Because for the next 90 days, your job is the mess [music] deck.

[00:09:36]Ever heard the term mess crank?

[00:09:39]This is what it means.

[00:09:41]Junior enlisted sailors, usually E3 and below, >> [music] >> get temporarily assigned to the supply division to help keep the crew's mess running.

[00:09:52]And before anybody imagines them learning secret Navy recipes, let's clear something up.

[00:09:59]The culinary specialists do the actual cooking.

[00:10:03]The mess cranks do everything else.

[00:10:07]Carrying trays, refilling drink stations, wiping tables down after every meal, cleaning the deck, then cleaning it again 2 hours later because 4,000 people just walked through carrying coffee and powdered eggs.

[00:10:27]Sailors nicknamed the industrial dishwasher the dragon because the soap was strong enough to destroy your hands, ruin your uniforms, and make you question several life decisions before the first week was over.

[00:11:45]No exceptions because your division is already busy.

[00:11:49]Everybody goes through it.

[00:11:52]It's a little like being hired as an electrician and then finding out your first 3 months are spent washing dishes for a small floating city.

[00:12:06]Seriously, why pull a trained aviation mechanic off the flight deck and put him on dish duty for 3 months?

[00:12:15]What is the actual logic behind that decision?

[00:12:19]Well, there are really two answers. The practical answer is simple. Feeding 15,000 to 17,000 meals a day takes more manpower than the culinary specialists can provide by themselves. The math just stops working without mess cranks.

[00:12:39]The Navy figured out a long time ago that there's probably no faster way to understand how a ship actually functions as a community than to help feed [music] it.
