What if I told you that frozen tomatoes have clarifying superpowers? When you freeze tomatoes, the ice crystals rupture the cell walls, collapsing their structure. Within this cellular structure, there's soluble pectin and insoluble cellulose. Once these get distributed and released, they create a loose mesh-like matrix that can physically trap suspended particles through your murky cocktail during filtration. Not only that, but in this process, the natural glutamates and acids are redistributed into the drink, making all the flavors feel heaps more integrated. This couldn't have been more perfect a technique to clarify my muddy looking dirty mug. Tequila, fresh lime, triple second agave mixed with calamata olive brine, all filtered through tomato. It was yum.
