[00:00:16]And as we get older, and obviously menopause can really impact this with the loss of estrogen, is that those logs start to get a bit frayed. They start to fall apart a little bit as we get older, and that collagen degradation that we have as we get older is one big reason why our skin feels rougher as we get older. looser, it looks a little more wrinkly. That can be made worse by these advanced glycation end products or eating all this sugar, and that sugar then bonding to that collagen. And the second way is chronic inflammation.

[00:00:44]Every time you eat foods that are rich in sugar, whether it's a dessert type of a food, or it can even be something as simple as white bread, white pasta, you get sugar spikes. And those sugar spikes can cause insulin spikes, and we do know that chronic insulin spikes can lead to chronic inflammation.
