Most dog allergies and itching are caused by environmental allergens like pollen, dust, mold, and dust mites rather than food, with environmental allergies accounting for approximately 95% of cases; food allergies are more likely when accompanied by chronic vomiting, diarrhea, or ear inflammation, and dogs can bring in environmental allergens through sniffing and walking outside, affecting both their skin and gastrointestinal tract.

Allergies in dogs aren’t always what people think.Added:
Allergies, they're terrible, and there's a couple of different types. There's food allergies, and then there's environmental allergies. In my experience, the majority of allergies or just itching is due to environmental allergies. Pollen, dust, mold, dust mites. Sometimes food's involved, and when it is, usually you have diarrhea and vomiting or some history of diarrhea and vomiting. I think people think food causes all allergies or predominantly it's a food allergy, and I don't agree with that. I think it's environmental allergies. So, if your dog's licking its feet, if it's rubbing its nose on the ground, if it's licking its belly, back between its back legs, you know, there's a 95% chance it's got environmental allergies. Pollen, dust, mold, and it needs to be a treated appropriately, and it's not related to food. If you have throwing up and itching, or you have throwing up, diarrhea, and inflamed ears, it could be due to food. But, dogs also consume and bring in allergens.
Just go to go look at all the pollen on your car right now or underneath your car or on your driveway. When your dog sniffs in there, he will bring in those allergens, and they'll swallow them, and that can cause problems in the GI tract as well. Most of the time, it's going to be environmental allergies.
