And today we're trying each other's funeral place.
>> A repass means to me it's a going away party.
>> Getting together with the entire community.
>> I'd say they're very different. They're more laidback.
>> It's a time for us to celebrate. We've already cried at the funeral, but now this is where we have the party. I hate to say more fun cuz funerals aren't supposed to be fun.
>> So, basically, we meet at [music] person's house, basically my grandmother, and people bring over food.
>> It's all about family coming together, laughing before we go home and cry again.
>> We celebrate the life of the person that's gone. Recap of memories.
>> My family [music] ends up in karaoke.
keep on burning. It's just like a typical family function. It definitely started in black culture >> because I feel like it was just a space for people to come together.
>> Yeah, I'd say it started spiritually [music] from there as like a celebration of life.
So, today I brought I'm going to call it a basic plate. Don't think it's basic, but you have everything you need. You have mashed potatoes, green beans with potatoes because who said there's too many starches? We have macaroni and cheese, four different cheeses, fried chicken, which is a must. A roll. Y'all know where it came from? Do not judge.
And we got a little hot sauce. This is a comfort plate. You might not eat it all at the repass, [music] but you're going to take it home. You going to eat, and you going to sleep real real good.
[music] To top it off, bam. Jello cake.
Fresh, fluffy. It gives a little little light feel so you're not too too full.
You eating this at the party, you eating this at home in bed. My plate will be the winning plate because obviously it's made with love, but also because I improvised. You're never going to get the [music] same thing twice.
Wow.
>> This is a lot.
>> I like it. I'm intrigued. I'm liking I'm loving like all the colors. love cake. A big dessert guy.
>> Mac and cheese looks a bit fast foodie like a Chick-fil-A or a cake.
>> But I don't know if it they tried to bake it and then they didn't like let it bake all the way.
>> Hawaiian roll cake looks bit crumbly [music] but it looks good. So I'm going to try it.
>> Um it's not bad. What I would say though, I feel like the consistency is kind of gritty.
>> It's a bit bland. It's not bad, but I just think it needs some seasoning. It looks like there's pepper in there, but not enough. I'm going to try the mashed potatoes.
It's so thick and I feel like the thickness is taking away from the seasoning that you did put in there. Cuz these are probably the same as potatoes you use for the green beans.
>> I personally wouldn't make mashed potatoes. It tastes a bit garlicky. I like that.
>> So, there's a reason I've never had mashed potatoes on a repass plate. You can make a lot of those and it can stretch a lot. So, I get that. I'm lacking like the love and the flavor and like maybe like the comfort.
>> I'm gonna try the chicken.
It's fried really nicely. It's the [music] same with the mac and cheese. I just feel like there's not enough seasoning. Like >> like the batter is good and crispy and even like kind of like soft, which [music] I like. And I would say chicken legs seasoning your batter with the same seasoning, but you have to really let that seasoning soak into that meat. I'm going to try it with the I think this is hot sauce.
>> Got a kick. I like it. I like it. Picked me right in my throat.
>> It does help the chicken, but I want more from like flavor-wise, but the chicken is cooked really well.
>> Feel like some of the seasoning in here should have been on that chicken. Let me try this roll. Kind of looks ashy.
>> Roll definitely looks like it came out the pack. Just put on the plate.
>> Yeah, >> a roll is a roll. I don't have much to say about the roll. Let me try this.
The texture is so mushy that I can't really taste much of the green bean. I don't know about the cakes. Like, it looks good, but then it also looks a bit dry.
>> It's very pretty. I love the strawberry looks fresh. Look, the whipped cream.
Let me try it with the strawberries and the whipped cream.
>> A+ for the dessert. Like, you ate that.
I ate it. It was good. Very fresh. I feel like it was vanilla cake, poked holes in it, probably soaked some maybe milk in there.
>> I don't understand what's going on here cuz I It's not undercooked, but it's very [music] not structured. I'm not mad at it, but I'm not best pleased.
>> I would say that this person loved this person and the love of spice just like the food. Besides the hot sauce, >> I would give it a 6.5 based on the fact that I didn't spit out the green bean and I like I really like the mashed potatoes.
>> I'm gonna give this a 6.8.
[music] So today I brought a really traditional meal I feel like to me. I bought some fried catfish, red beans and rice with some andoui sausage, smoked turkey legs, and some honey butter cornbread with some Louisiana hot sauce on the side. For repass food, I feel like we make a lot of quantities, things that you don't have to like watch over time. Like red beans, it's a slow simmer and cook hours and you can make pots and pots of it. Catfish or either barbecue can make fast um quantities in a short amount of time without a lot of watching. And cornbread is just a comfort. And the hot sauce is just adds that little spice.
There's some seasonings up in there. I don't like the texture of fish. It's catfish. The cornbread. It looks good.
It looks crumbly. Another hot sauce. I [snorts] don't know where the greenery is. Is there a vegetable? A repass is meant to have a lot of food for comfort and, you know, warming the soul after an emotional day. And if I saw this plate [music] after a repass, I would probably cry some more. If this came in at a repass, I would be happy [music] to see it. These are all things that I like to eat. I'm going to try the uh fish first cuz I'm not [music] a big fan.
Wait a minute. Might have some competition.
>> I quite like it, which is a shock for me cuz I don't really do fish. Very seasoned, flaky, good texture. I can't even say nothing bad about the fish/ chicken.
>> I don't really like the hot sauce. Hot sauce is very vinegary. Okay, I'm going to taste the what I think is jumbolayia.
The gravy is way too thick. I don't know if they used the root to make it, but it's like they put too much flour in there.
>> Surprisingly, it doesn't taste like that much. I smelled the seasoning. Dang. I'm not going to hold you. I'm a little disappointed. The sausage is okay, but I'm not a big fan of >> The meat is good. Very tender. The rice is cooked very well. Would I be upset if I had it for free? No, I would not. I like the consistency of the cornbread.
It's very pillowy and a bit crumbly.
That's Jiffy. They knew what they was doing.
>> Jiffy can be nice if you make it in the right way.
>> It doesn't have honey. It's not sweet, but it's buttery and it does melt in my mouth.
>> It's a little too sweet. It almost doesn't actually taste like cornbread. I can get [music] with it. It's not the best cornbread. It's not the worst cornbread.
>> This plate is given I loved them, but we probably only talked once a month. I give this plate 7 and 1/2. If y'all would have gave me collard greens, say less. I'mma take my plate and leave. If I was just scoring the catfish, I'd actually give it an eight. But because of the uh the red beans and rice and the cornbread, I'd [music] give it a 5.5.
>> [bell] >> I think this plate will win today cuz I made it. I made it [music] with love. I made it with skill. I just think it's a allaround great plate. Mac [music] and cheese, curry goat, fried chicken. Who doesn't love fried chicken? Gravy on the rice and on the chicken. It's a winner.
I think my plate brings love because when you taste my food, [music] you can taste like the care, the hours, and like cooking is my love language and I definitely feel that comes out in my food.
>> [sighs] >> I don't know what this is.
>> First of all, I'm seeing a lot of color, but I smell nothing.
>> Chicken a little brown, but it's a leg.
I get what you was going with. Juicy dark meat. I know what you're doing.
>> Now, this chicken is dark skin. [music] >> I appreciate a baked mac and cheese. It looks like there's a lot of seasoning.
>> Macaroni cheesecake. Quiet. It's look like a piece of cake. [laughter] >> First look, it belongs at funeral home.
Not at my family's cuz you had me at the chicken, the macaroni, the rice. Had it been a gravy, maybe this is a gravy.
>> So, I am excited [music] to try this. I have never seen this in my life.
>> The potato is good and it's spicy. Wait, what is it?
There's meat. I judged [music] too early. Hold on. We got something going here. kind of remind like a neck bone or something. [music] It's giving me Caribbean, Jamaican, Trinidad, some kind of island kind of vibe.
>> Is that basami? That's cooked well.
>> No, >> that's disappointing.
>> Only thing I'm tasting in this is the oregano on top. The noodles are also a little translucent looking.
>> They use mild cheddar. I don't think they use sharp. No salt. Don't it look like bam. It look like I'm put in my mouth and bam.
>> It's I don't taste like any like cheddar or anything on that. Maybe the cheddar just went on top of like the crust thing.
>> Oh, but it's creamy. The texture wonderful flavor lacking. Let's get into the chicken.
>> Seasoned pretty good. It's not overly done. It's not burnt.
>> I might be burning mine. [laughter] [crying] I'm in trouble.
>> Good job on the chicken. It's juicy.
Garlic, onion powder, seasoned salt, maybe paprika.
>> I would never expect to see this at a repass. Maybe the um fried chicken and rice.
>> This is good. You loved You loved your loved one, and I felt that because you have street food mixed with Sunday cooking. This lets me know y'all party.
>> I'm going to score this plate 6.5.
>> This plate 8.6. And half of it wasn't even good.
>> Actually, I'mma change my score to a seven.

>> And I can tell how much you loved me or did not like me by the plate.

>> It's smell like cafeteria mac and cheese.

>> Oh, >> what's the cheese blend?
>> There is no cheese blend. That's the problem.
>> And the thing about it is you at a black funeral. Almost everybody there is lactose intolerant. So you bringing this there.
>> I'm going tell you right now.
>> You bring this to a black funeral, it's going to be two funerals in one or nobody eating this and people going to be pissed.
>> Mad >> mashed potatoes.
>> Mashed potatoes.
>> Which I'm still very baffled as to why.
>> I just I don't like mashed potatoes like that. Y'all got to stop forcing out people plates like >> room. But these don't belong here.
>> Need a little bit of clove. Need a little bit of that oil in there. I'm I'm just I'm looking at this big old potato.
You see all these potatoes inside this damn thing. Ain't no meat in there though.
>> I know. That's the part that's throwing me like you ain't going to put no smoked turkey. So, uh smoked turkey neck.

>> Turkey neck. Some bacon. Something a straight off the can.
>> They ain't put no pepper on there or nothing.
>> Jesus. This fried chicken at at first glance looks really crunchy.
>> It smells good though. I'mma do a little piece of it.
>> All they use is salt and pepper. Nothing else.
>> I felt like I thought I had smelled some like mustard cuz mustard is like really how you get your chicken crunchy. She ain't use no mustard.
>> And whoever did it, that grease wasn't fresh.
>> Mm- And have you tried it with the hot sauce?
>> No offensive.
>> This hot sauce tastes a little ethnic.
It's good though. I like that. M. It's like a heat. It's like a sweet heat to it a little bit.
>> Why?
Okay.
>> That's a wine roll. Mhm.
>> Ain't nobody did nothing to it, but it's a horn roll.
>> If you come in with this chicken at my funeral.
>> Oh, that ghost is coming up.
>> I'm giving it a six.
>> A five.
>> This is a like Fourth of July, Junth dessert. This is not like a funeral dessert.
>> Strawberry.
>> Mhm.
>> It's not saying a lot, but it's saying it's it's saying you're going to be okay.
>> You're going to be all right.
>> It's a pat on the back. Overall, you still get a five for me. And I only said it because I would still be pissed at you. I will finish this and I will feel grateful for it, but I would still be upset that you messed up the main course.
>> And then I'mma readjust the the meal score for about like a 7.2%.
>> Finished that whole >> I did. I'm tell >> he finished more than I did.
>> When I tell you this cake hits and it's it's so moist. Fine. Sh. You get a six.
>> Oh.
>> Is that catfish or a chicken cutlet? It look >> I don't know what type of fish it is though. It look a little fried hard. I can I can tell that from the south just from this.
>> Okay. Yeah. Okay. Okay. Fork.
>> Look, I'm going to go keep it classy.
>> M. Okay.
>> It's seasoned really well.
>> Mhm. It's the fish is so seasonal. I feel like it doesn't even need the hot sauce.
It's chicken in here. Huh. This a gumbo red beans and rice fusion. I feel like I taste some bay leaf in there.
>> I was expecting a more explosive taste.
I expected more, but it's good.
>> I'm trying to figure out if this is chicken or if this is like turkey neck.
I'm excited for this cornbread, though.
>> It's I touch it.
>> This cornbread is taking me through there in the best way possible. It's like soft. It's sweet. [music] >> This doesn't give me funeral plate, >> but it's a good plate. I give this plate an eight.
>> Well, I'm going to do a eight for this one.
>> What is this?
>> Where is that? [laughter] You know what it is?
>> This is going to sound crazy, right? But the chicken reminds me of ramen noodles.
It has flavor. It has way more flavor than the last piece of chicken.
>> I don't know if I want ramen noodles at my funeral, though. But the breading on it is bomb. Like, honestly, I was talking, but this breading right here >> Mhm. gives >> it like great.
>> It's a nice levity to it. It's crunchy.
It's lemony.
>> Oh, we got a little pull.
>> Mine didn't.
What is wrong with y'all? Y'all know how to make mac and cheese? It's nothing but pepper on here. That's all I taste. It's pepper and a very thin top layer of cheese. I'm unsure as to what this is.
>> Me, too. I'm kind of scared about it, too.
>> Who what black person would bring curry to repass?
>> Maybe they're Jamaican. Maybe they island.
>> If you Jamaican, then you should have went all the way. Where's the jerk chicken?
>> M I don't know why that little bone in there. It's about to kill me.

>> The taste overall is good though. Like I taste I wish there was more of a curry taste. Like I [music] like that deep rich curry flavor. That's good.

Yeah, I knew I was going to win cuz I'm me. I do what I do. I was in the kitchen and [music] that automatically means I won. So, yeah. Wow, that was unexpected.
