Mostly with how little it gives back.
The meat [music] is dark, lean, and gamey, with none of the soft marbled fat you know.

You don't so much bite it as work it, jaw aching for what feels like forever.
Then, the plants.
Tough roots dug [music] out of hard ground and laid on the coals until they soften into something starchy and faintly [music] sweet.
Wild greens, stringy and sharp. Fruit, [music] if you're lucky. Small, seedy, sour little things. Nothing like the sugar bombs sitting in your fruit bowl.
A modern tongue would call this meal two things.
Bland and exhausting.
The Hadza of Tanzania, who still forage much like this, take in something like 100 to 150 g of fiber a day. Five or six times what you manage.
Their food fights back. Every meal is a workout.
And the flavor your tongue spends all day quietly [music] begging for, that deep concentrated hit of sweetness or fat or salt, almost never comes.
Almost.
Because there was one taste out there worth risking your life for.
And the rarest one of all is the one you now buy for pocket [music] change.
That taste was sweetness.
And in the ancient world, sweetness meant one thing above all others.
Honey.
To your ancestors, honey was a miracle.
Pure, dense, instant [music] energy in a world where energy was the entire game.
Among modern hunter-gatherers in the tropics, [music] honey can make up 10 to 20% of everything they eat. [music] To them, it was a jackpot. Pure fuel in a world that rationed every [music] single calorie. But, the jackpot came guarded by tens of thousands [music] of stinging bees, usually high up a tree.
So, humans did something extraordinary.
[music] They made a deal with a bird.
There's a small African bird called the greater honeyguide, and it does exactly [music] what the name says.
It finds a bee's nest, then flies back and chatters at people until they follow.
It leads them to the honey.
The people open the nest with smoke and axes, take the honey, and leave the wax behind for the bird.
A wild animal and a human running a quiet little business together across the savanna.
Nobody arranged it. Nobody taught it.
They worked it out somewhere deep in the past, and they've never stopped.
So, think about what that means.
>> [music] >> Your sweet tooth isn't a flaw in you.
It's the same ancient hunger that once sent grown adults 40 ft up a tree into a cloud of stings for [music] a single mouthful of gold.
But, sweetness wasn't even the most valuable thing they were [music] chasing.
The real treasure was something you've been trained your whole life to fear.
Fat.
To you, fat is the line on the label you're supposed to feel guilty about.
To your ancestors, fat was survival [music] itself.
Wild game is brutally lean. A deer, an antelope carries almost none of the soft fat of farmed meat.
Scarce, and scarce meant precious.
They went for the marrow inside the bones, the brain, [music] the richest organs first.
Your craving for it isn't weakness.
It's a memory of a time when fat was the line between making it through winter and not.
But the thing that truly rebuilt the human menu wasn't a food at all.
It was fire.
A Harvard anthropologist named Richard Wrangham has a bold answer to that.
Cooking is the thing that made us human.
Raw food is hard work, slow to chew, slow to digest.
Cooking does that work for you outside your body.

Cooked starch alone can hand you up to a third more energy from the very same plant.

Once fire was doing the digesting, your ancestors no longer needed the big, heavy guts that other apes haul around.
So the guts [music] shrank.
And the energy saved got poured into the most [music] expensive organ you own.
The brain.

Though in fairness, scientists still argue about how much of that story fire really explains. [music] Either way, fire is old, and it's woven all the way through you.
In one cave in Israel, there are traces of fish cooked some 780,000 years ago.
But cooking did something else, too.

For now, there are two more sensors [music] on that ancient dashboard. And both of them are being lied to every single day.
That leaves the two quietest sensors on the dashboard.
>> [music] >> And they were every bit as honest. Take salt. Right now, somewhere inside you, sodium is firing your nerves and holding the water in your blood.
>> [music] >> Without it, you'd be dead within days.
But salt was genuinely hard to find out there. No shaker, no bag from a shelf.
>> [music] >> So your tongue learned to lunge at it.
That first salty hit feels wonderful precisely because it was once so rare.
Your ancestors would have guarded a handful of it like treasure.
You scrape it off a chip and throw the rest in the bin.
Sourness was the spoilage [music] detector. The sharp little slap that warned of fruit picked too green or meat a day past [music] safe.
And that deep, savory richness, the one we call umami, was the [music] taste of pure protein. Roasting meat, marrow, bone broth.

Here's the trouble.
Every one of these signals evolved to tell you the truth about a wild world.
Salt is rare, so chase it. Sweet is rare, so chase it. Fat is precious, [music] so chase it.

Because somebody worked out [music] how to take those exact signals, salt, sugar, fat, that savory hit, pull them out of nature >> [music] >> and pack them into everything in amounts your ancestors could never have imagined.
Your alarms still fire. They just can't tell that the emergency is fake.
Which brings you right back to that open refrigerator. And to the question of why nothing inside it is ever [music] quite enough.
For almost all of human history, the deal was simple. The foods your tongue screamed [music] for, sweet, salty, fatty, were rare. And they were good for [music] you.
So, wanting them more was an advantage.
The people who chased calories hardest >> [music] >> were the ones who made it through the lean times.
You are their descendant. You inherited the hunger because it worked. [music] There's even a name for the idea.
Back in 1962, >> [music] >> a geneticist named James Neel proposed what he called the thrifty gene.
>> [music] >> In a world of feast and famine, he argued, a body that was brilliant at grabbing energy and storing it as fat [music] had the edge.
When the famine came, it had reserves.
It survived. [music] It had children. It passed the trait on.
These days, researchers argue plenty about the details, but the core ache [music] it describes is one you already know.
Because the famine stopped coming.
[music] At least it did for a lot of us.
In the last blink of time, a few thousand years, not the the your body was shaped for, food went from scarce [music] to endless.
And the same reward system that once [music] nudged your ancestors toward a precious handful of berries now lights up hard every time you pass a vending machine.
Something sweet, something [music] fatty, and your brain releases a small pulse of dopamine. A quiet pat on the back that says, "Good.
Do that again."
That was a survival tool. Now, it's a hook.
And the modern food world knows exactly how to pull it. So, you stand at the fridge at 11:00 at night, already full, and still [music] searching.
Not because something's wrong with you, because something's working too well in a world it [music] was never built for.
Your cravings aren't broken. They're just answering a question nobody's asking anymore.
But to really see how strange those instincts [music] are, you have to step back into the lean world they were built for.
And into a trap almost nobody ever hears about.

Rabbit starvation.

Your body can only handle so much protein at once.

The waste it makes, >> [music] >> ammonia, starts pooling in your blood faster than you can clear it.
>> [music] >> And ammonia is a poison.
Left to climb, it brings nausea, confusion, and eventually, it kills you.
So, picture an ancient hunter in a hard season with nothing left to eat but lean game.
Rabbit. Wild deer stripped of every last scrap [music] of fat.
They could eat it by the armful, and that pure lean protein could still take them down.
The explorer Vilhjalmur Stefansson watched people do exactly this.
Full bellies, starving bodies.
Which is why fat and a little starch weren't [music] indulgences out there.
They were the things that made all that protein safe to live on.
They were survival itself. [music] So, the next time you feel that deep pull towards something rich and [music] fatty, and some quiet voice calls it greed, understand [music] what that pull really is.
It isn't a character flaw.

Your body remembers a danger your mind [music] has never had to meet.

The things you now sip [music] and savor, black coffee, dark chocolate, hoppy beer, raw bitter greens, red wine, your ancestors [music] could not have tolerated.
