To switch back to blue iMessage bubbles, you can toggle iMessage off and on in Settings > Messages, ensure you're connected to Wi-Fi or cellular data, reset network settings in Settings > General > Transfer or Reset iPhone > Reset Network Settings, or perform a hard restart by pressing volume up, volume down, and holding the side button until the Apple logo appears.
