Today, Maya is sharing her simple homemade jalebi recipe. First, take 1 cup refined flour and add 1/2 cup of curd. Now, slowly add slightly warm water and mix everything together. Make a smooth batter with a consistency similar to dense pancake or dense bhaji.
Now, beat the batter really well so it becomes light and airy. Keep this covered and let it ferment overnight.
You can also keep for 1 to 2 hours only, but fermented ones taste delicious. The next day, add two spoons of refined flour and mix it well again. Make sure the consistency is not too flowy. It should fall in a thick, continuous ribbon rather than dripping like water.
If it is too thin, then add some more refined flour. Now, add a little yellow food color and keep it aside. Now, let's make the sugar syrup. Take two cups of sugar and one cup of water in a pan. Let it boil nicely and add four to five drops of lemon juice. Now, cook until you get the perfect one thread consistency.
The syrup should feel sticky and form one thin thread between your fingers.
Now, heat plenty of ghee in a pan. Just before making jalebis, add a pinch of baking soda to the batter and give it one final mix. Take a cone plastic or piping bag and fill it with the batter.
Cut the tip of the cone and carefully pipe the batter into hot ghee in circular jalebi shapes. Do not wait too long. As soon as the jalebis start turning slightly golden, quickly turn them to the other side. Do not over brown them because darker jalebis will not taste as good. Once they are lightly golden and crispy, immediately dip them fully into the sugar syrup. Let them soak for just two or three seconds. Now, take them out and look at those beautiful shiny jalebis. Crispy outside, juicy inside, and absolutely delicious.
